The Denver Cut comes from the most marbled muscle, under the shoulder blade of the steer and it is the fourth most tender cut of Wagyu beef. It makes up 0.82% of the Wagyu carcass. Denver steaks have a nice beefy flavour and are one of the increasingly popular steaks that come from the Chuck primal. It stands out as having a particularly large amount of intramuscular fat. It pleasantly surprises with an intense, slightly sweet taste and a delicately buttery texture.
